Experimental conditon Meat proteome papers Publications

     Skeletal muscle is a heterogeneous tissue composed of fast and slow type fibers. Masseter has a higher proportion of slow type fibers, and semitendinosus has a higher proportion of fast type fibers, therefore these muscles represent slow and fast type muscle, respectively. Our team is studying about the effect of muscle types on meat quality.
